Gluten Free Dairy Free Brownies

Chocolate scores major brownie points in our house, especially when it's this fudgey and gluten free! This is by far one of our favorite desserts as of late. I mean, just look at those luscious bites of love... Yeah, that was weird. How about "scrumptious little nuggets"? I guess that wasn't any better. These brownies are so good I can't put it into words, so you'll have to try them for yourself!
We both know you aren't here to hear me talk (or see me talk?), so let's get down to the recipe!
Gluten Free and Dairy Free Brownies
Ingredients
1 C - GF baking flour
3/4 C - cocoa powder
1/4 t - sea salt with more for on top
3/4 C - coconut oil
1 1/2 C - granulated sugar
1 T - vanilla extract
3 ea - eggs
3/4 C - dairy free chocolate chips and more for on top
Directions
1. Preheat the oven to 350℉ and grease an 8"x 8" baking dish.
2. Cream together the coconut oil and sugar until thoroughly mixed.
3. Combine the eggs and vanilla. Next add the eggs one at a time to the sugar, mixing completely in between additions.
4. Whisk together the flour, cocoa powder, and salt to break up any large lumps.
5. Add the flour mixture to the egg mixture and mix until thoroughly combined. Make sure to scrape the sides and bottom of the bowl to free any stuck ingredients.
6. Add the chocolate chips and mix until evenly distributed.
7. Pour the batter into the pre-greased pan and lightly sprinkle the top with more chocolate chips and a pinch of salt.
8. Bake for 20-25 minutes or until a shiny, solid top forms.

I have found that these brownies get even more fudgey the longer they sit... if they last long enough!
